Fruit was picked on the 20th April and whole bunch pressed to stainless steel for settling. The juice was then racked straight to 100% new oak and allowed to ferment naturally. Fermented to dryness and left over winter before going through malolactic fermentation. Racked out of barrel, no filtering with minimal sulfur added.
Clear, light straw colour. Citrus, honey with a fine acidity line. Slight reduction, oak spice, almond meal rounded out by great texture and balance.
